Grown Up Grilled Cheese Sandwiches with Balsamic onions, Prosciutto, and Sliced Pears

This grown up grilled cheese sandwich is an indulgent treat that deserves a wine that can hold up its combination of savory and sweet flavors! Our Napa Valley Cabernet Sauvignon is ideal. The wine's natural sweetness of its fruit balances the bright acidity and makes it an ideal wine for this fun and delicious dish!

Ingredients

• 1 medium red or white onion, sliced into thin wedges
• 2 tablespoons unsalted butter
• Sea salt
• 1 tablespoon balsamic vinegar
• Freshly ground black pepper
• 4 slices, artisanal bread
• 2 tablespoons mayonnaise
• 1.5 cups mixed grated cheeses – gruyere, jack, sharp white cheddar
• 1 ripe, but firm, pear sliced
• 2 slices prosciutto

Preparation

Place large cast iron skillet on the stovetop over medium-low heat. Slowly cook onions in butter with a generous pinch of salt. Cook onions low and slow stirring occasionally – onions will become soft and starting to brown on the edges, after about 25 minutes of cooking. Then add balsamic to the pan. Stir and cook for another 5-10 minutes until onions are nice and caramelize. Season with additional salt and pepper to taste. Set aside.

Generously smear outer-sides of your bread with mayo. In a mixing bowl, stir together onions and grated cheese, then build your sandwiches. Add a slice of firm, but ripe, pear to each sandwich.

Wipe out your skillet and return it to the stove over low heat. When pan is hot, add sandwiches to the warm skillet – cook low and slow until bread is golden and cheese is melty.

Serve right away.
